YUM YUM/ EGGPLANT MEATBALLS

Have you liked the recipes I've shared with you I made thus far?Like some from here and here? Well I'm keeping it coming. This week is Eggplant "Meatballs". I don't like to make meat dinners often; which is contradictory cause I'm Jamaican.If you didn't know now you know. Although I do eat meat here and there I try to keep me meals meat and egg free.


To make this meal you will need:
1 eggplant
Escallion
Thyme
Seasoning
Zucchini
Parchment Paper

Directions:
Cut or food process you veggies.
Add Seasoning
Mix Together 
Form 
Place on Parchment 
Bake on 400 for 20 mins.
Done!
